Mine usually preferred to eat in the water...you do hav a LARGE water area for him right?
They loved earthworms, boiled chicken, melon, berries, mealworms and tadpoles. Some keepers have been able to get them to eat anacharis and duckweed (excellent foods). Try bits of sardines, pre-killed minnows (not goldfish)canteloupe, honeydew, watermelon, pears and salmon as well. Try feeding in the water.
Avoid the spinach if you can...not a good food. Try dandelion greens and maybe clooards or mustard greens. endive and escarole are good choices too as is any type of squash.
