I'm fairly new to Tarantulas, but if she is truely a she (and she probably is), and is eating regularly, then its certainly an adult. After their molt to maturity T's will only molt once every year or two. Now for most species that would be in the case of a female, as the male will usually die months to weeks after reaching maturity.
