Thats a neat design. A few questions... How is it heated? Why did you choose to leave so much space between rows?

Sorry it's taken me so long to reply.
When I built the rack I had planned 30 pans
(Cambro food pans 1/3 size) but didn't know for sure
how deep, 2 1/2, 4 or 6 inch. Went with the 2 1/2
may add 2 more levels at a later time.
It's heated with Cox heat cord on plastic angle in the back.
